I work on one at a time and finish it before starting a new one.
I work on multiple at a time and get bits each of them done gradually.
Sometimes I focus on one, sometimes I can focus on multiple at a time.

I do a lot of practice, which I don't share with anyone. Sometimes I'll sit and do a whole painting start to finish (about 4 hours or so in one sitting), if the fit strikes me. Other times I'll start a project and get a lot of work done, then start something else and finish it before going back to the first one.
Sometimes I start one and never finish it, and just forget about it until I find it in my folder. Then I look at it and go, "Huh," and move on.
